Thursday: Coconut Noodle Pad Thai

    Thanks for hosting! I shared my hummus bites which are great vegan and allergy-friendly appetizers. I also shared caramelized popcorn substitute, another allergy-friendly party treat that’s now corn-free and gluten-free. Enjoy!

    I am in love with quinoa – I can eat it for breakfast, lunch and dinner. I now make a main substitute for rice. I can wait to try your greek quinoa salad.

    This is one of my favorite and easiest recipes. I just ate two plates and now I’m stuffed. Highly recommend trying this one. It’s a big hit with my friends too.
