Meeting Ingrid Hoffmann in person at the Food Network in Concert was such a thrill. I have so much respect for professional chefs and even more admiration for anyone who publishes a cookbook. As much as I adore cooking, creating a recipe from scratch is not my forte. Give me any recipe to tackle and I’m up for the challenge.
Excited to dive into Ingrid Hoffmann’s new cookbook, Latin D’Lite : Deliciously Healthy Recipes with a Latin Twist, I wasn’t sure what to expect. When I think of latin cuisines the word healthy doesn’t usually come to mind. Which is precisely why Latin D’Lite is unique featuring more than 150 classic Latin recipes, all with Ingrid’s signature touches but with a healthy spin. Not to mention bright, drool worthy photos of many dishes.
Offering healthful ingredient substitutions and cooking tips such as using lime juice as a coleslaw dressing rather than mayonnaise is very smart. Ingrid also suggests preparing codfish balls from fresh, rather than dried cod, then baking rather than frying and using frozen mango and a touch of rosewater and white wine for light sorbet.
In addition to Ingrid’s cookbook, JCPenney provided me with several items from the Simplemente Delicioso collection like this colorful 14 pc knife and tool set.

Scanning through Latin D’Lite, Peruvian Lemon Chicken immediately grabbed my attention primarily because of the short ingredient list and time requirements. While I love cooking for my family, time is usually not on my side during the week. This looked attainable and I’d never tried combining green chiles with chicken and lemon. Yum!!
This was ridiculously easy and simply delicioso! You have to try it. I paired with roasted green beans and spaghetti squash.
Peruvian Lemon chicken Recipe by Ingrid Hoffmann
Ingredients
- 4 boneless, skinless chicken breast halves, rinsed and pat dry
- salt
- freshly ground pepper
- 4 tbsp canola oil (I used coconut oil)
- 2 pounds medium yellow onions, halved and sliced
- 1 tsp minced garlic
- 3 tbsp aji amarillo paste (yellow Peruvian chile) or canned mild green chiles
- 1 cup fresh lemon juice (from 5-6 lemons)
Instructions
- Pound chicken to 1/4 inch. This step is optional but will help reduce cooking time.
- Season chicken with salt and pepper.
- Heat oil in large skillet over medium high heat.
- Add chicken and cook, turning halfway through cooking until golden brown, about 4 minutes. Transfer to plate.
- Add onion and garlic and reduce heat to medium low.
- Cook stirring occasionally until onions are golden brown about 10 minutes.
- Stir in aji amarillo or green chiles with salt and pepper.
- Return chicken to skillet, spoon some of the onions over the chicken, cover and cook until the chicken is opaque when pierced in the thickest part of the tip of the kife, 10-15 minutes.
- Add lemon juice and cook another 5 minutes.
