Hello friends! Did you have an opportunity to try any of the recipes from last week’s Paleo meal plan? I think my family’s favorite was the Mexican Chicken Chili and the girls loved the Paleo Fish Sticks.

There were great intentions to make Pumpkin Ziti, but sadly with the rain endured on Halloween, the day was almost a flop and I ran out of time and energy. Actually the day was spent rounding up the remainder of my costume. Ya know, important things!!

This southern girl couldn’t resist the opportunity to emulate Willie and Korie from Duck Dynasty. So much fun! Thankfully there was a break in the weather long enough to trick or treat. Benefit of a short Halloween? Less candy to deal with.

The week is going to be short, easy and apparently several one pot chicken dishes as hubs won’t make it home every night for dinner. If you’re in need of more options, be sure to follow my Paleo board on Pinterest.

Paleo Weekly Menu – November 3rd

Sunday: Paleo Pot Roast + Cauliflower Mash + Green Salad (diced green apples, cashews, cucumber, romaine, Sweet Basil Vinaigrette). This pot roast was the bomb and a big hit so I’ll post the recipe this week. I treated the family to “real” mashed potatoes with butter.

Monday: Leftovers

Tuesday: Creamy Rosemary Chicken Lasagna from PaleOMG.com (not strict Paleo but gluten-free)
