Happy Sunday Paleo friends. How’s your weekend going? The weather is getting cooler but I’m not necessarily ready for full on winter. Last week’s meal plan was relatively successful, however it’s difficult to stay on track when hubs is traveling. My motivation to cook diminishes but I know it’s good for the kids to power through.
Mom confession: The day I had planned to make PaleOMG’s chicken lasagna (see link below) I ran out of time and decided to order sushi. It’s on the schedule for tonight and I can’t wait to see how it turns out.
One of my biggest time savers is leftovers. It’s how I was raised and I don’t believe in wasting food. The family doesn’t always share my enthusiasm for repeating meals the following night and many times food will spoil and gets thrown out. Another scenario is I store leftovers in the freezer, it gets lost and eventually freezer burn sets in and spoils.
After a friend told me about the FoodSaver 2-in-1 Vacuum Sealer she was using to preserve veggies from the garden, I purchased one this week. How did I not think of this earlier?? This is going to perfect for serving leftovers. In one night I sealed chicken, homemade applesauce and leftover spaghetti squash.
This would have been perfect when I was making baby food for the girls.

Tuesday: Grass-Fed Hamburgers with Creamy Avocado Sauce + Truffle Sweet Potato Fries
Wednesday: Paleo Chicken Nuggets + Cauliflower Mash + Green Salad
Thursday: Tilapia Parmesan from Musings of a Housewife + Roasted Broccoli with Garlic
Friday: Make Your Own Pita Pizza
