Easy Cauliflower Rice (#Paleo)
Eating Paleo and gluten-free means ya cut out all the fun white stuff like rice. Discovering cauliflower rice was like winning the carb lottery! I cut out most gluten in 1995 back in the day when eating fat-free was all the rage. It changed my life and helped me drop 25 pounds almost immediately. I’ve always allowed myself a treat by eating the occasional sandwich, pasta, potatoes and rice.
Making a commitment to the Paleo lifestyle means being creative in the kitchen and finding alternatives to the white foods my family loves. When it comes to cooking, I’m up for a challenge and replacing white rice with cauliflower rice has been a hit around here.
Ingredients
- small head of organic cauliflower, finely chopped in food processor
- 1-2 tablespoons of coconut oil
- salt and pepper to taste
Instructions
- Cut florets in small pieces and place in food processor. Pulse until the cauliflower is reduced to the size of couscous or rice grains. Depending on the size of your food processor, you may need to do this in multiple stages.
- Place in microwavable bowl with glass lid like Pyrex.
- Add coconut oil, salt and pepper
- Microwave 5-6 minutes and set for 1-3 to allow rice to steam a little longer.
- Fluff rice, season to your preference as needed.
Notes
A head of cauliflower makes a good amount of rice. You can also sauté in coconut oil with onions.
